No carbs? No problem! I am whipping up my Chicken Lettuce Cups with tender and moist Rotisserie Chicken from the Grocery Store that is packed with flavor, and low on Carbs! My secret ingredient... Chopped Dates from United With Earth. They pack just the right amount of sweetness to balance out the flavors of the Tahini and Lemon! It's the perfect dish to make at home in-between Zoom calls! A few simple ingredients and you're good to go! Quick Tip: Chop your chicken in advance and keep it in an airtight container. It stores for up to 5 days, which will save you lots of time in the kitchen!

Shopping List:

1 Rotisserie Chicken


Lemon Juice

Salt & Pepper (to taste)

Olive Oil


United With Earth Chopped Dates



Butter Lettuce

Red Onion (Pickled Red Onion Preferred)

Cilantro & Green Onion for Garnish


-Mix 1 tablespoon Tahini, 1 Tablespoon Olive Oil and the juice of half a Lemon together in a medium bowl

-Add Salt & Pepper to taste

-Add your chopped Rotisserie Chicken

-Mix and serve in washed & dried Butter Lettuce Cups

-Top with Cilantro, sliced Avocado, Green Onion and Pickled Red Onion
